Description

A delightful cake combining sweet sultanas and tart apples, perfect for any occasion.


Ingredients

Scale
  • 225g self-raising flour
  • 175g unsalted butter, softened
  • 175g caster sugar
  • 3 large eggs
  • 100g sultanas
  • 2 cooking apples, peeled, cored, and grated
  • 1 tsp ground cinnamon
  • Icing sugar, for dusting

Instructions

  1. Preheat your oven to 160°C (325°F) and prepare a deep 20cm cake tin.
  2. In a large mixing bowl, combine flour, butter, sugar, and eggs. Beat until smooth.
  3. Gently fold in grated apples and sultanas until evenly distributed.
  4. Pour the batter into the prepared tin and smooth the top.
  5. Bake for approximately 75 minutes, until golden brown and a skewer comes out clean.
  6. Cool in the tin for 10 minutes before transferring to a wire rack. Dust with icing sugar before serving.

Notes

Check at the 60-minute mark to prevent overbaking. Store in an airtight container for up to 3 days.
