Description

Delightful cookies filled with gooey marshmallow fluff, chocolate, and M&Ms for the ultimate sweet treat.


Ingredients

  • 1 cup unsalted butter, room temperature
  • 1 cup creamy peanut butter
  • 1 ½ cups light brown sugar, packed
  • 2 large eggs, room temperature
  • 2 cups all-purpose flour
  • 1 cup old-fashioned oats
  • 1 teaspoon baking soda
  • ½ teaspoon kosher salt
  • 1 ½ cups plain M&M candies
  • 1 ½ cups semi-sweet chocolate chips
  • 1 jar (7 ounces) marshmallow fluff
  • Mini M&M candies, for topping (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Beat the unsalted butter on medium-high speed until smooth. Add the creamy peanut butter and mix for an additional 2 minutes until well combined.
  3. Add in the packed brown sugar and mix until smooth (about 2 minutes). The mixture should be light and fluffy.
  4. Add the eggs one at a time, mixing for 30 seconds after each addition. Remember to scrape the sides of the bowl to combine everything.
  5. With the mixer off, add flour, oats, baking soda, and salt; mix on low until just combined—it should look slightly crumbly.
  6. Add the M&M candies and semi-sweet chocolate chips, mixing until incorporated.
  7. Using a 2-tablespoon cookie scoop, drop dough onto the prepared sheets and flatten each disk slightly.
  8. Spoon marshmallow fluff into the center of half the disks, cover with another disk, and seal the edges firmly to keep the marshmallow hidden.
  9. If desired, top with mini M&Ms for an adorable finish!
  10. Bake for 15-16 minutes until the edges are golden brown.
  11. Let cookies cool on baking sheets for about 5 minutes before transferring them to a wire rack.

Notes

Store in an airtight container for up to 5 days or freeze for longer storage. Be careful not to overmix the dough after adding flour.
