- 4 cups baby spinach and arugula mix
- 2 chicken breasts
- 1 tablespoon olive oil
- 1 cup strawberries, halved
- 1 avocado, diced
- 1/2 cup crumbled feta cheese
- 1/3 cup slivered almonds
- 1/4 cup red onion, thinly sliced
- 3 tablespoons olive oil
- 1.5 tablespoons balsamic vinegar
- 1 tablespoon honey
- 1 teaspoon Dijon mustard
- 1 clove garlic, minced
- Salt to taste

Instructions
- Season the chicken: Sprinkle salt and pepper generously on both sides of the chicken breasts.
- Cook the chicken: Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Once hot, place the chicken in the skillet. Cook for 5–7 minutes on each side or until the chicken is golden brown and no longer pink in the center.
- Slice and let it rest: Remove the chicken from the skillet and let it rest for about 5 minutes before slicing it into strips.
- Make the dressing: In a small bowl, whisk together the remaining 3 tablespoons of olive oil, balsamic vinegar, honey, Dijon mustard, minced garlic, and a pinch of salt and pepper.
- Combine the salad: In a large mixing bowl, combine the baby spinach and arugula mix, halved strawberries, diced avocado, crumbled feta, slivered almonds, and thinly sliced red onion. Toss gently to mix.
- Add chicken and dressing: Top the salad with the sliced chicken, then drizzle the dressing over it. Toss gently to coat every bite.
- Plate and serve: Divide the salad among plates or bowls, drizzle with any remaining dressing if desired, and enjoy the fresh flavors.
