  • 1 cup coconut milk

Instructions

  1. Heat olive oil in a large skillet over medium heat until it shimmers.
  2. Add the diced onion and sauté for about 5 minutes until translucent.
  3. Stir in minced garlic, ground cumin, smoked paprika, salt, and black pepper; cook for another minute.
  4. Toss in the drained chickpeas and stir to coat them in the spices; warm for about 3 minutes.
  5. Pour in coconut milk and bring to a simmer; let cook for 5-10 minutes, stirring occasionally.
  6. Sprinkle fresh cilantro over the top and serve with lemon wedges.
