Description

A comforting bowl of creamy Marry Me Chicken Soup infused with garlic, sun-dried tomatoes, and tender chicken that’s perfect for impressing loved ones.


Ingredients

  • 1 tbsp olive oil
  • 1/2 yellow onion, diced
  • 4 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes in olive oil, drained and roughly chopped
  • 2 tbsp tomato paste
  • 7 cups chicken broth
  • 2 tsp salt (plus more to taste)
  • 1/2 tsp black pepper
  • 2 tsp Italian seasoning
  • 1/2 tsp crushed red pepper
  • 12 oz gluten-free shell pasta (or pasta of choice)
  • 2 cups shredded cooked chicken (rotisserie recommended)
  • 3 cups fresh baby spinach, chopped
  • 3/4 cup half & half (or Original Nutpods for dairy-free)
  • 1 package Boursin cheese (or 4 oz cream cheese/Kite Hill cream cheese for dairy-free)
  • 1/2 cup Parmesan cheese, divided (or 1/4 cup nutritional yeast for dairy-free)

Instructions

  1. In a large Dutch oven or pot over medium heat, drizzle 1 tbsp of olive oil. Allow it to warm for about a minute.
  2. Add the diced onion and minced garlic to the oil. Sauté for 3–4 minutes until softened and fragrant.
  3. Stir in the chopped sun-dried tomatoes and tomato paste. Cook for an additional 1-2 minutes.
  4. Carefully stir in the chicken broth, salt, black pepper, Italian seasoning, and crushed red pepper. Raise the heat to bring it all to a gentle boil.
  5. Once boiling, add the uncooked shell pasta and cook until al dente, typically 10-12 minutes, stirring occasionally.
  6. Lower the heat to medium-low. Add shredded chicken, chopped baby spinach, half & half, and Boursin cheese. Stir until the spinach wilts and the broth becomes creamy.
  7. Ladle the soup into bowls and top with remaining grated Parmesan and fresh parsley if desired.

Notes

Allow the half & half and cream cheese to come to room temperature for easier blending. Consider toasting the olive oil with some herbs before starting the sauté.
