- 1 cup (2 sticks / 227 g) unsalted butter
- 1 ¼ cups (250 g) light brown sugar, packed
- ½ cup (100 g) granulated sugar
- 2 large eggs, room temperature
- 1 teaspoon pure vanilla extract
- 2 cups (256 g) all-purpose flour
- 1 cup (90 g) old-fashioned oats
- 1 teaspoon kosher salt
- ½ teaspoon baking soda
- ¼ teaspoon ground cinnamon
- 1 cup (168 g) white chocolate chips
- 1 cup (168 g) semi-sweet chocolate chips
- Additional 2 tablespoons white chocolate chips for topping
- Additional 2 tablespoons semi-sweet chocolate chips for topping
Instructions
- Brown the butter in a medium saucepan over medium-low heat until chestnut brown, about 5-7 minutes.
- Mix the sugars into the cooled butter until smooth and chill in the refrigerator for 10 minutes.
- Preheat your oven to 325°F (160°C) and prepare a 9×13-inch baking dish.
- Combine the cooled butter mixture with eggs and vanilla in a large bowl.
- Sift together the flour, salt, baking soda, and cinnamon, then mix into the wet ingredients until just combined.
- Fold in chocolate chips, reserving 2 tablespoons of each type for topping.
- Transfer the dough to the baking dish, pressing it evenly into corners, and sprinkle reserved chocolate on top.
- Bake for 35-40 minutes until the edges are golden and a toothpick comes out with moist crumbs.
- Cool in the pan for at least 10 minutes before transferring to a wire rack and cutting into squares.
Notes
For a dairy-free option, use coconut oil. For gluten-free bars, substitute all-purpose flour with 1:1 gluten-free flour blend.
