Ingredients

    • 1 red bell pepper (sliced)

    • 2 tbsp fresh ginger (grated)
    • 2 green onions (sliced)
    • 1 tbsp sesame seeds

 

    • For the marinade:
    • 2 tbsp soy sauce
    • 1 tbsp cornstarch
    • 1 tbsp maple syrup
    • 1 tsp sesame oil

 

  • For the sauce:
  • 1/3 cup pure maple syrup
  • 3 tbsp soy sauce
  • 2 tbsp rice vinegar
  • 1 tbsp hoisin sauce
  • 1 tbsp fresh ginger (grated)
  • 1 tsp cornstarch
  • 1/2 tsp red pepper flakes

Instructions

  1. Marinate beef: Combine beef with marinade ingredients. Let sit 15 minutes while prepping vegetables.
  2. Make sauce: Whisk together all sauce ingredients in a small bowl until smooth.
  3. Stir-fry vegetables: Heat 1 tbsp oil in wok over high heat. Add onion and cook 2 minutes. Add bell pepper and broccoli; stir-fry 3 minutes until crisp-tender. Remove.
  4. Cook beef: Heat remaining oil. Add beef in single layer and sear 1-2 minutes per side until browned. Push to sides.
  5. Add aromatics: Add garlic and ginger to center of wok; cook 30 seconds until fragrant.
  6. Combine: Return vegetables to wok. Add sauce and toss everything together for 1-2 minutes until glossy and thickened.
  7. Serve: Garnish with green onions and sesame seeds. Serve over steamed rice or noodles.

Notes

  • Use real maple syrup for best flavor (not pancake syrup)
  • For extra caramelization, let sauce reduce an additional minute
  • Substitute honey if maple syrup unavailable
  • Add 1 tbsp butter at end for richer sauce
