- 1 9-inch unbaked pie crust (store bought or homemade)
- 2 cups mashed sweet potatoes (baked and peeled)
- 1 cup evaporated milk
- 2 large eggs
- 3/4 cup granulated sugar
- 1/4 cup packed brown sugar
- 4 tbsp unsalted butter (melted)
- 1 tsp vanilla extract
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/4 tsp salt
Instructions
- Preheat your oven to 400°F (200°C). Bake 2 large sweet potatoes for 45 to 60 minutes until soft. Let them cool before peeling and mashing until smooth.
- In a large bowl, combine the mashed sweet potatoes, evaporated milk, eggs, melted butter, and vanilla extract. Mix until creamy and fully blended.
- Add the granulated sugar, brown sugar, ground cinnamon, ground nutmeg, and salt to the mixture. Beat again until smooth and evenly mixed.
- Pour the sweet potato filling into your unbaked pie crust set in a glass pie dish.
- Bake for 50 to 55 minutes at 350°F (175°C) until the center is mostly set and only slightly jiggles when shaken.
- Let the baked pie cool completely at room temperature for at least 1 hour. Serve with whipped cream or vanilla ice cream.
Notes
For the perfect texture, ensure your sweet potatoes are well-cooked before mashing. You can prepare the pie a day in advance.
