  • 2 cups mashed sweet potatoes (baked and peeled)
  • 1 cup evaporated milk
  • 2 large eggs
  • 3/4 cup granulated sugar
  • 1/4 cup packed brown sugar
  • 4 tbsp unsalted butter (melted)
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp salt

Instructions

  1. Preheat your oven to 400°F (200°C). Bake 2 large sweet potatoes for 45 to 60 minutes until soft. Let them cool before peeling and mashing until smooth.
  2. In a large bowl, combine the mashed sweet potatoes, evaporated milk, eggs, melted butter, and vanilla extract. Mix until creamy and fully blended.
  3. Add the granulated sugar, brown sugar, ground cinnamon, ground nutmeg, and salt to the mixture. Beat again until smooth and evenly mixed.
  4. Pour the sweet potato filling into your unbaked pie crust set in a glass pie dish.
  5. Bake for 50 to 55 minutes at 350°F (175°C) until the center is mostly set and only slightly jiggles when shaken.
  6. Let the baked pie cool completely at room temperature for at least 1 hour. Serve with whipped cream or vanilla ice cream.
