Description

Delightful mango-filled mochi that combines traditional Japanese flavors with a tropical twist for a refreshing dessert.


Ingredients

Scale
  • 2 cups fresh mango, chopped
  • 2 tbsp sugar
  • 2 tsp cornstarch
  • 1 tbsp lemon juice
  • 1 cup glutinous rice flour
  • 3/4 cup sugar
  • 3/4 cup water
  • Cornstarch or potato starch for dusting

Instructions

  1. Prepare the Mango Filling by combining chopped mango, sugar, and lemon juice in a saucepan and heating until soft.
  2. Blend the mango mixture until smooth, return to the saucepan, and stir in cornstarch until thickened.
  3. Chill the filling in the refrigerator for at least 30 minutes, then scoop into balls and freeze for another 30 minutes.
  4. Make the Mochi Dough by mixing glutinous rice flour, sugar, and water, then microwave until opaque and stretchy.
  5. Cool the dough slightly, divide into portions, and flatten each piece.
  6. Place a mango ball in the center, seal the dough around it, and roll into a smooth ball.
  7. Dust with cornstarch to prevent sticking and store in an airtight container.

Notes

Best consumed within one day at room temperature or refrigerated for up to three days. Can be frozen for one to two months.
