Ingredients
Scale
- 250 g mango flesh, roughly cubed (about 1 large ripe mango)
- 1/2 cup orange juice
- 1 1/4 cups water
- 2 tsp agar agar powder
- 1/3 cup sugar
- Lime juice, to taste
- 15 small mint leaves (optional for garnish)
- 2/3 cup water
- 1 tsp agar agar powder
- 4 Tbsp sugar
- 1/8 tsp salt
- 2/3 cup coconut milk (full-fat for richness, light for a lower-calorie option)
Instructions
- Blend mango cubes and orange juice until smooth.
- Heat in a pot water and agar agar until boiling, ensuring agar agar dissolves.
- Combine sugar and mango puree into the pot, cooking for 2-3 minutes.
- Set the mango mixture in a mold and let cool until firm, about 30 minutes.
- Heat water and agar agar in a separate pot, bringing to boil.
- Add sugar, salt, and coconut milk, cooking for 2 minutes more.
- Layer the coconut mixture over the mango layer carefully.
- Chill in the refrigerator for at least 2 hours until set.
Notes
Ensure the mango layer cools slightly before adding the coconut layer to prevent mixing. Use quality ingredients for the best flavor.
