Ingredients

  • 250 g mango flesh, roughly cubed (about 1 large ripe mango)
  • 1/2 cup orange juice
  • 1 1/4 cups water
  • 2 tsp agar agar powder
  • 1/3 cup sugar
  • Lime juice, to taste
  • 15 small mint leaves (optional for garnish)
  • 2/3 cup water
  • 1 tsp agar agar powder
  • 4 Tbsp sugar
  • 1/8 tsp salt
  • 2/3 cup coconut milk (full-fat for richness, light for a lower-calorie option)

Instructions

  1. Blend mango cubes and orange juice until smooth.
  2. Heat in a pot water and agar agar until boiling, ensuring agar agar dissolves.
  3. Combine sugar and mango puree into the pot, cooking for 2-3 minutes.
  4. Set the mango mixture in a mold and let cool until firm, about 30 minutes.
  5. Heat water and agar agar in a separate pot, bringing to boil.
  6. Add sugar, salt, and coconut milk, cooking for 2 minutes more.
  7. Layer the coconut mixture over the mango layer carefully.
  8. Chill in the refrigerator for at least 2 hours until set.

Notes

Ensure the mango layer cools slightly before adding the coconut layer to prevent mixing. Use quality ingredients for the best flavor.
