- 1 cup brown sugar
- 1 cup apple cider vinegar
- 1 small red onion, finely chopped
- 2 cloves garlic, minced

- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground cumin
- 1/4 teaspoon ground cloves
- 1/4 teaspoon salt
- 1/2 cup golden raisins (optional)
Instructions
- Prepare the mangoes: Peel and cut them into small chunks.
- Sauté the base: Heat oil in a saucepan, add red onion, and sauté until soft; stir in garlic and ginger.
- Spice it up: Add chili flakes, cinnamon, cumin, cloves, and salt. Stir and deglaze with vinegar.
- Introduce the mangoes: Add diced mangoes, brown sugar, and raisins; bring to a gentle boil.
- Simmer love: Reduce heat and simmer uncovered for 40-50 minutes, stirring occasionally.
- Jar it up: Cool chutney and spoon into sterilized jars; seal tightly.
