Ingredients

  • 3 large ripe mangoes, peeled and diced
  • 1 cup brown sugar
  • 1 cup apple cider vinegar
  • 1 small red onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1/2 teaspoon chili flakes
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon salt
  • 1/2 cup golden raisins (optional)

Instructions

  1. Prepare the mangoes: Peel and cut them into small chunks.
  2. Sauté the base: Heat oil in a saucepan, add red onion, and sauté until soft; stir in garlic and ginger.
  3. Spice it up: Add chili flakes, cinnamon, cumin, cloves, and salt. Stir and deglaze with vinegar.
  4. Introduce the mangoes: Add diced mangoes, brown sugar, and raisins; bring to a gentle boil.
  5. Simmer love: Reduce heat and simmer uncovered for 40-50 minutes, stirring occasionally.
  6. Jar it up: Cool chutney and spoon into sterilized jars; seal tightly.
