Instructions
- Prep the Mangoes: Dice both mangoes into 1/2-inch pieces.
- Make the Mango Puree: Blend half of the diced mango into a smooth puree.
- Combine Ingredients: In a medium bowl, mix chia seeds, coconut milk, maple syrup, mango puree, and salt. Whisk thoroughly.
- Chill the Mixture: Let the mixture sit in the refrigerator for 15 minutes, then stir again. Let it sit for another 15 minutes.
- Divide and Serve: Spoon the chia pudding into serving cups and top each with the reserved diced mango.
