Description

A rich and creamy no-bake cheesecake featuring crunchy chocolate-covered malt balls, perfect for any occasion.


Ingredients

Scale
  • 200g digestive biscuits
  • 100g unsalted butter, melted
  • 400g full-fat cream cheese, softened
  • 75g icing sugar
  • 300ml heavy whipping cream
  • 150g Maltesers (plus extra for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) if you want to use it for a crust.
  2. Pulse the digestive biscuits in a food processor until fine crumbs.
  3. Combine the biscuit crumbs with melted butter in a bowl and mix well.
  4. Press the mixture into the bottom of a springform pan to form the crust.
  5. Beat the softened cream cheese in a mixing bowl until smooth.
  6. Gradually add icing sugar and mix until combined.
  7. In another bowl, whip the heavy cream until stiff peaks form.
  8. Gently fold the whipped cream into the cream cheese mixture.
  9. Fold in crushed Maltesers.
  10. Spoon the filling over the crust and smooth the top.
  11. Refrigerate for at least 4 hours or preferably overnight.
  12. Before serving, remove from the pan and garnish with extra Maltesers.
