- 200g digestive biscuits
- 100g unsalted butter, melted
- 400g full-fat cream cheese, softened
- 75g icing sugar
- 300ml heavy whipping cream
- 150g Maltesers (plus extra for topping)
Instructions
- Preheat your oven to 350°F (175°C) if you want to use it for a crust.
- Pulse the digestive biscuits in a food processor until fine crumbs.
- Combine the biscuit crumbs with melted butter in a bowl and mix well.
- Press the mixture into the bottom of a springform pan to form the crust.
- Beat the softened cream cheese in a mixing bowl until smooth.
- Gradually add icing sugar and mix until combined.
- In another bowl, whip the heavy cream until stiff peaks form.
- Gently fold the whipped cream into the cream cheese mixture.
- Fold in crushed Maltesers.
- Spoon the filling over the crust and smooth the top.
- Refrigerate for at least 4 hours or preferably overnight.
- Before serving, remove from the pan and garnish with extra Maltesers.
