- 2 cups mashed potatoes
- 1 cup shredded cheddar cheese
- 4 slices cooked bacon, crumbled
- 2 tablespoons chopped chives or green onions
- 1/2 teaspoon garlic powder
- 1/4 teaspoon black pepper
- 1/4 teaspoon salt
- 1 large egg
- 1/2 cup all-purpose flour
- 1 cup breadcrumbs
- Oil for frying
Instructions
- In a large bowl, combine mashed potatoes, cheddar cheese, crumbled bacon, chives, garlic powder, pepper, and salt. Mix in the egg until well blended.
- Scoop out about 1 tablespoon of the mixture and roll it into balls. Place on a baking sheet lined with parchment paper.
- Set up a dredging station with bowls for flour, beaten egg, and breadcrumbs. Roll each potato ball in flour, dip in egg, and coat with breadcrumbs.
- Heat oil in a deep pan over medium heat. Fry potato bites in batches until golden and crispy, about 2–3 minutes per side.
- Transfer fried bites to a paper towel-lined plate to remove excess oil.
- Serve hot with dipping sauces and garnish with chopped chives.
Notes
For extra crunch, double-dip the bites in flour, egg, and breadcrumbs. Store leftovers in an airtight container for up to 3 days.
