Description

Delicious crispy bites packed with creamy mashed potatoes, cheese, bacon, and chives, perfect for dipping and sharing.


Ingredients

  • 2 cups mashed potatoes
  • 1 cup shredded cheddar cheese
  • 4 slices cooked bacon, crumbled
  • 2 tablespoons chopped chives or green onions
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  • 1 large egg
  • 1/2 cup all-purpose flour
  • 1 cup breadcrumbs
  • Oil for frying

Instructions

  1. In a large bowl, combine mashed potatoes, cheddar cheese, crumbled bacon, chives, garlic powder, pepper, and salt. Mix in the egg until well blended.
  2. Scoop out about 1 tablespoon of the mixture and roll it into balls. Place on a baking sheet lined with parchment paper.
  3. Set up a dredging station with bowls for flour, beaten egg, and breadcrumbs. Roll each potato ball in flour, dip in egg, and coat with breadcrumbs.
  4. Heat oil in a deep pan over medium heat. Fry potato bites in batches until golden and crispy, about 2–3 minutes per side.
  5. Transfer fried bites to a paper towel-lined plate to remove excess oil.
  6. Serve hot with dipping sauces and garnish with chopped chives.

Notes

For extra crunch, double-dip the bites in flour, egg, and breadcrumbs. Store leftovers in an airtight container for up to 3 days.
