- 1.2 lb spaghetti
- 0.75 cup grated Parmesan cheese
- 0.5 cup fresh parsley, chopped
- 1.1 lb shrimp, peeled and deveined
- 4 tbsp olive oil
- 8 garlic cloves, thinly sliced
- 3 tsp red pepper flakes
- 2 tsp lemon juice
- 2 tbsp dry white wine
- Salt and pepper to taste
Instructions
- Boil the pasta in a large pot of salted water until al dente, about 9-11 minutes.
- Prep garlic and parsley while the pasta cooks.
- Drain pasta, reserving 1 cup of pasta water.
- Sauté garlic in olive oil over medium heat for 2-3 minutes.
- Add red pepper flakes and cook for 30 seconds.
- Add shrimp and cook until pink and opaque, about 2-3 minutes.
- Pour in white wine and let reduce for 30 seconds.
- Add lemon juice, salt, and pepper.
- Incorporate reserved pasta water for a smooth sauce.
- Toss spaghetti in the skillet with the sauce and shrimp.
- Mix in Parmesan and parsley, then serve immediately.
Notes
Make sure shrimp is at room temperature for even cooking. Leftovers can be stored in the fridge for up to 2 days.
