Description
A refreshing twist on the classic Italian dessert Tiramisu, this Lemon Tiramisu combines creamy mascarpone and zesty lemon curd with airy ladyfingers for a delightful summer treat.
Ingredients

- 300 ml thickened cream (1 ΒΌ cups)
- 500 g mascarpone (1.1 lb)
- β cup caster sugar (66 g)
- 2 teaspoons vanilla extract
- Zest of 1 lemon
- 28 Savoiardi biscuits
- β cup Limoncello (80 ml)
- 1 cup lemon curd (250 ml)
Instructions
- In a medium bowl, beat the chilled cream with an electric mixer until soft peaks form (about 3-4 minutes).
- In a separate large bowl, combine the mascarpone, caster sugar, and vanilla extract. Beat on low speed until thick (2-3 minutes).
- Gently fold in the lemon zest.
- Add one-third of the whipped cream to the mascarpone mixture and fold gently. Repeat until fully combined.
- In a small bowl, mix the Limoncello with 2 tablespoons of water.
- Quickly dip each Savoiardi into the Limoncello mixture and lay them in a 9-inch square tin.
- Spread half of the mascarpone mixture over the ladyfingers, followed by half of the lemon curd.
- Add a second layer of dipped ladyfingers, then spread the remaining lemon curd on top.
- Top with the remaining mascarpone mixture.
- Refrigerate for at least 6 hours or overnight to set.
- Before serving, sprinkle with lemon zest or garnish with lemon slices.

Notes
Leftovers can be stored in the fridge for up to 3 days. This dessert is great to make ahead of time, and flavors improve when allowed to rest.
