Description

Deliciously fluffy lemon poppy seed rolls that bring a sweet taste of sunshine to your breakfast table.


Ingredients

  • 2/3 cup (163 g) whole milk
  • 5 tablespoons granulated sugar, divided
  • 1 packet (2 and 1/4 teaspoons) active dry yeast
  • 2 large eggs, room temperature
  • 3 cups (375 g) all-purpose flour
  • 1 tablespoon poppy seeds
  • 1 tablespoon lemon zest from about 1 large lemon
  • 1 teaspoon kosher salt
  • 1/2 cup (1 stick / 113 g) unsalted butter, cut into 1-inch pieces, room temperature
  • 1/2 cup (160 g) lemon curd
  • 1 cup (125 g) confectioners’ sugar
  • 23 tablespoons whole milk

Instructions

  1. Combine warm milk and 1 tablespoon of the sugar. Sprinkle yeast over the milk and whisk. Let sit until foamy, about 5 minutes.
  2. Add eggs to the yeast mixture and whisk until smooth.
  3. Combine flour, remaining sugar, poppy seeds, lemon zest, and salt in a stand mixer bowl.
  4. Pour milk and egg mixture into dry ingredients. With mixer on low, add butter, one piece at a time.
  5. Increase mixer speed to medium-high and knead dough until smooth, about 5 minutes.
  6. Transfer dough to a greased bowl, cover, and let rise in a warm place until doubled, about 1 to 1.5 hours.
  7. Roll dough into a 10×15-inch rectangle. Spread lemon curd evenly across the surface.
  8. Roll dough into a log and cut into 9 equal rolls.
  9. Arrange rolls in a greased pan, cover, and let rise until puffy, about 45 minutes.
  10. Preheat oven to 350°F. Bake for 25-28 minutes until lightly golden.
  11. Let rolls cool slightly before preparing the glaze.
  12. Whisk together confectioners’ sugar and milk until smooth. Drizzle over warm rolls.
