Description

Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 2 tablespoons granulated sugar
  • 1/3 cup unsalted butter, melted
  • 3 packages cream cheese (8 ounces each), room temperature
  • 1 cup sour cream, room temperature
  • 1 cup granulated sugar
  • 4 large eggs, room temperature
  • 1/4 cup lemon juice, freshly squeezed
  • 1 tablespoon lemon zest
  • 1 teaspoon vanilla extract
  • 1/2 cup lemon curd
  • 4 large egg whites, room temperature
  • 1/4 cup granulated sugar
  • 1/4 teaspoon cream of tartar

Instructions

  1. Preheat your oven to 350°F (175°C). Line the bottom of a 9-inch springform pan with parchment paper.
  2. In a medium mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until well combined and press into the bottom of the springform pan.
  3. Beat the cream cheese, sour cream, and sugar until smooth. Add the eggs, one at a time, then mix in lemon juice, lemon zest, and vanilla.
  4. Pour the cheesecake filling over the crust and bake for 60-70 minutes until the top is golden brown and the center is slightly jiggly. Cool to room temperature, then refrigerate for at least 3 hours.
  5. Spread the lemon curd evenly over the cheesecake once it is chilled.
  6. Preheat your oven to 375°F (190°C). Beat egg whites on high until soft peaks form, then gradually add sugar and cream of tartar, beating until glossy and stiff peaks form.
  7. Spoon the meringue over the lemon curd and bake for 10 minutes until golden brown.
  8. Let the cheesecake cool to room temperature before slicing.
