Description

A delightful blend of sweet and tart flavors, this zesty lemon fudge is the perfect treat for warm weather gatherings and festive celebrations.


Ingredients

  • 1/2 cup unsalted butter, room temperature
  • 1/2 cup whole milk
  • 2 (2.9 ounce) packages lemon cook and serve pudding & pie filling (dry mix)
  • 3 1/2 cups powdered sugar
  • 1 tablespoon milk (as needed)

Instructions

  1. Melt the butter in a medium saucepan over medium heat.
  2. Add the milk and bring the mixture to a simmer, stirring occasionally.
  3. Stir in the dry lemon pudding mixes and cook until thickened, about 2-3 minutes.
  4. Remove from heat and let cool slightly.
  5. Gradually stir in powdered sugar until smooth, adding milk as necessary.
  6. Pour the mixture into a greased 8×8 pan and smooth the top.
  7. Allow to set at room temperature or refrigerate until firm, about 1 hour.
  8. Cut into squares and serve.

Notes

Store in an airtight container at room temperature for up to a week or refrigerate for up to two weeks. You can substitute with non-dairy options for a vegan version.
