- 1/2 cup unsalted butter, room temperature
- 1/2 cup whole milk
- 2 (2.9 ounce) packages lemon cook and serve pudding & pie filling (dry mix)
- 3 1/2 cups powdered sugar
- 1 tablespoon milk (as needed)
Instructions
- Melt the butter in a medium saucepan over medium heat.
- Add the milk and bring the mixture to a simmer, stirring occasionally.
- Stir in the dry lemon pudding mixes and cook until thickened, about 2-3 minutes.
- Remove from heat and let cool slightly.
- Gradually stir in powdered sugar until smooth, adding milk as necessary.
- Pour the mixture into a greased 8×8 pan and smooth the top.
- Allow to set at room temperature or refrigerate until firm, about 1 hour.
- Cut into squares and serve.
Notes
Store in an airtight container at room temperature for up to a week or refrigerate for up to two weeks. You can substitute with non-dairy options for a vegan version.
