Delightful squares combining tart lemon and rich coconut, perfect for any occasion.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 cup unsalted melted butter
  • 2 eggs
  • 1 cup brown sugar
  • 1 1/2 cups unsweetened shredded coconut
  • 2 tablespoons lemon juice
  • 2 tablespoons all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon vanilla extract
  • Zest from 1 lemon
  • 1 cup powdered sugar
  • 3 tablespoons lemon juice
  • 1 tablespoon unsalted melted butter

Instructions

  1. Preheat your oven to 350°F (175°C) and spray a 9×13-inch baking pan with non-stick spray.
  2. In a medium-sized bowl, combine 1 1/2 cups all-purpose flour, 1/2 cup brown sugar, and 1/2 cup melted butter. Mix until well combined and press into the bottom of your baking pan. Bake for 10 minutes until lightly golden.
  3. In a large bowl, beat 2 eggs and 1 cup brown sugar together until light and fluffy. Add lemon zest and 2 tablespoons lemon juice, removing any seeds.
  4. Stir in 1 1/2 cups shredded coconut, 2 tablespoons all-purpose flour, 1/2 teaspoon baking powder, 2 tablespoons lemon juice, and 1/4 teaspoon vanilla extract. Mix until well combined.
  5. Pour the coconut mixture over the baked crust, smoothing it out evenly. Bake for an additional 20 minutes, or until golden brown on top.
  6. Allow the squares to cool in the pan.
  7. In a small bowl, combine 1 cup powdered sugar, 3 tablespoons lemon juice, and 1 tablespoon melted butter until smooth. Spread evenly over the cooled squares.
  8. Cut into 15 squares and enjoy!

Store in an airtight container at room temperature for up to 3 days or in the fridge for up to a week.
