- 1 1/2 cups all-purpose flour
- 1/2 cup brown sugar
- 1/2 cup unsalted melted butter
- 2 eggs
- 1 cup brown sugar
- 1 1/2 cups unsweetened shredded coconut
- 2 tablespoons lemon juice
- 2 tablespoons all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon vanilla extract
- Zest from 1 lemon
- 1 cup powdered sugar
- 3 tablespoons lemon juice
- 1 tablespoon unsalted melted butter
Instructions
- Preheat your oven to 350°F (175°C) and spray a 9×13-inch baking pan with non-stick spray.
- In a medium-sized bowl, combine 1 1/2 cups all-purpose flour, 1/2 cup brown sugar, and 1/2 cup melted butter. Mix until well combined and press into the bottom of your baking pan. Bake for 10 minutes until lightly golden.
- In a large bowl, beat 2 eggs and 1 cup brown sugar together until light and fluffy. Add lemon zest and 2 tablespoons lemon juice, removing any seeds.
- Stir in 1 1/2 cups shredded coconut, 2 tablespoons all-purpose flour, 1/2 teaspoon baking powder, 2 tablespoons lemon juice, and 1/4 teaspoon vanilla extract. Mix until well combined.
- Pour the coconut mixture over the baked crust, smoothing it out evenly. Bake for an additional 20 minutes, or until golden brown on top.
- Allow the squares to cool in the pan.
- In a small bowl, combine 1 cup powdered sugar, 3 tablespoons lemon juice, and 1 tablespoon melted butter until smooth. Spread evenly over the cooled squares.
- Cut into 15 squares and enjoy!
