- 1/2 cup unsalted butter, at room temperature
- 1 lemon, zested (about 2 tablespoons)
- 2 tablespoons fresh lemon juice
- 1 teaspoon lemon extract

- 2 large eggs
- 1 egg yolk
- 1 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup powdered sugar
- 2 tablespoons lemon juice or water (for glaze)
- 1 teaspoon lemon zest (for glaze)
- 1 teaspoon lemon extract (for glaze)
Instructions
- Preheat your oven to 350°F (175°C). Line a 9×9 inch baking dish with parchment paper.
- Cream together the softened butter and granulated sugar until light and fluffy, about 2-3 minutes. Add eggs and egg yolk one at a time, mixing after each addition. Stir in vanilla and lemon extracts.
- In a separate bowl, whisk together flour, baking powder, and salt. Gradually add to wet ingredients, mixing until just combined.
- Pour batter into the prepared dish and bake for 22-25 minutes, until edges are firm but the center jiggles slightly.
- Once baked, allow the brownies to cool for 30 minutes. Mix powdered sugar, lemon juice, lemon zest, and lemon extract in a bowl to make the glaze. Pour over cooled brownies and spread evenly.
- Cut into squares and serve.
Notes
For added richness, consider adding white chocolate chips or swap lemon juice with orange juice for a twist. Store in an airtight container for up to 3 days or refrigerate for up to a week.
