Ingredients

  • 1 lemon, zested (about 2 tablespoons)
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon lemon extract
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 egg yolk
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup powdered sugar
  • 2 tablespoons lemon juice or water (for glaze)
  • 1 teaspoon lemon zest (for glaze)
  • 1 teaspoon lemon extract (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a 9×9 inch baking dish with parchment paper.
  2. Cream together the softened butter and granulated sugar until light and fluffy, about 2-3 minutes. Add eggs and egg yolk one at a time, mixing after each addition. Stir in vanilla and lemon extracts.
  3. In a separate bowl, whisk together flour, baking powder, and salt. Gradually add to wet ingredients, mixing until just combined.
  4. Pour batter into the prepared dish and bake for 22-25 minutes, until edges are firm but the center jiggles slightly.
  5. Once baked, allow the brownies to cool for 30 minutes. Mix powdered sugar, lemon juice, lemon zest, and lemon extract in a bowl to make the glaze. Pour over cooled brownies and spread evenly.
  6. Cut into squares and serve.
