- 2 cups all-purpose flour
- 1 cup unsalted butter, room temperature
- 1/2 cup granulated sugar
- 1 1/2 cups granulated sugar
- 1/4 cup all-purpose flour
- 4 large eggs, room temperature
- 2/3 cup freshly squeezed lemon juice
- 1 1/2 cups fresh blueberries
- Confectioners’ sugar for dusting (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- Prepare a 9×13 inch pan by lining it with parchment paper and spray with nonstick cooking spray.
- Make the crust by mixing 1 cup softened butter, 2 cups flour, and 1/2 cup granulated sugar until crumbly.
- Press the mixture evenly into the bottom of the prepared pan.
- Bake the crust for 23-25 minutes until firm and lightly golden.
- Prepare the filling by whisking together 1 1/2 cups sugar and 1/4 cup flour in a bowl.
- Add in 4 beaten eggs and 2/3 cup lemon juice, mixing until smooth.
- Pour the lemon filling over the baked crust.
- Sprinkle 1 1/2 cups blueberries on top, saving a few for garnish.
- Bake again for an additional 28-30 minutes until the edges begin to set.
- Cool to room temperature and refrigerate for at least 2 hours.
- Dust with confectioners’ sugar, cut into bars, and serve.
Notes
For a firmer texture, bake a little longer. Ensure the crust is fully baked to prevent sogginess.
