Description

A delightful dessert combining buttery crust, creamy lemon filling, and juicy blueberries for a burst of flavor in every bite.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup unsalted butter, room temperature
  • 1/2 cup granulated sugar
  • 1 1/2 cups granulated sugar
  • 1/4 cup all-purpose flour
  • 4 large eggs, room temperature
  • 2/3 cup freshly squeezed lemon juice
  • 1 1/2 cups fresh blueberries
  • Confectioners’ sugar for dusting (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Prepare a 9×13 inch pan by lining it with parchment paper and spray with nonstick cooking spray.
  3. Make the crust by mixing 1 cup softened butter, 2 cups flour, and 1/2 cup granulated sugar until crumbly.
  4. Press the mixture evenly into the bottom of the prepared pan.
  5. Bake the crust for 23-25 minutes until firm and lightly golden.
  6. Prepare the filling by whisking together 1 1/2 cups sugar and 1/4 cup flour in a bowl.
  7. Add in 4 beaten eggs and 2/3 cup lemon juice, mixing until smooth.
  8. Pour the lemon filling over the baked crust.
  9. Sprinkle 1 1/2 cups blueberries on top, saving a few for garnish.
  10. Bake again for an additional 28-30 minutes until the edges begin to set.
  11. Cool to room temperature and refrigerate for at least 2 hours.
  12. Dust with confectioners’ sugar, cut into bars, and serve.

Notes

For a firmer texture, bake a little longer. Ensure the crust is fully baked to prevent sogginess.
