Description

A flavorful and easy Korean spinach salad, seasoned with garlic and sesame oil, making it a delightful side dish for any meal.


Ingredients

  • 1.5 lb Fresh Spinach (with the stems on)
  • 4 cloves Garlic (minced)
  • 4 tbsp Soy Sauce
  • 4 tbsp Sesame Oil
  • 1 Green Onion (chopped)
  • 2 tbsp Sesame Seeds (crushed)
  • 1 tsp Sugar
  • 0.5 tbsp Korean Red Chili Flakes
  • 0.5 tbsp Korean Chili Paste

Instructions

  1. Prep the Spinach: Cut off any tough stems from your spinach, then rinse the leaves well under cold water. Drain them thoroughly to get rid of excess moisture and set aside.
  2. Blanch the Spinach: In a large pot, add 1 tsp of salt and bring water to a rolling boil. Once boiling, add your fresh spinach and blanch for about 30 seconds.
  3. Cool the Spinach: Quickly transfer the blanched spinach to a bowl of cold water to halt the cooking process.
  4. Remove Excess Water: Gently squeeze the spinach to remove as much water as possible. Form the spinach into two small balls and cut each ball in half.
  5. Mix Savory Ingredients: In a bowl, combine 2 cloves of minced garlic, 2 tbsp of soy sauce, 2 tbsp of sesame oil, ½ of the chopped green onion, and 1 tbsp of crushed sesame seeds. Add the spinach and toss gently.
  6. Mix Spicy Ingredients: In another bowl, combine 2 cloves of minced garlic, 2 tbsp of soy sauce, 2 tbsp of sesame oil, ½ of the chopped green onion, 1 tbsp of crushed sesame seeds, 0.5 tbsp of Korean red chili flakes, 0.5 tbsp of Korean chili paste, and 1 tsp of sugar. Add your spinach to this mixture and toss well.
  7. Let the salad sit for 10 minutes before serving to allow the flavors to meld beautifully.

Notes

Use high-quality fresh ingredients for the best flavor. This salad can be made a day in advance but hold off on the chili paste until serving.
