Instructions

  1. Prepare the crust: In a bowl, combine 2 cups graham cracker crumbs, 1/4 cup granulated sugar, and 1/2 cup melted unsalted butter. Stir until the mixture is well coated and resembles wet sand.
  2. Make the filling: In a separate bowl, use an electric mixer to beat 8 ounces of softened cream cheese until smooth. Gradually add 14 ounces of sweetened condensed milk, 1/2 cup key lime juice, and 1 tablespoon lime zest. Beat until the mixture is creamy and well combined (about 3-4 minutes).
  3. Whip the cream: In another mixing bowl, whip 2 cups of heavy whipping cream with 1/4 cup powdered sugar and 1 teaspoon vanilla extract. Whip until stiff peaks form—this takes about 4-5 minutes on high speed.
  4. Layer the trifle: In a trifle dish or individual glasses, layer one third of the graham cracker mixture, half of the lime filling, and a layer of whipped cream. Repeat the layers with the remaining crumbs and filling, finishing with a generous layer of whipped cream on top.
  5. Garnish and chill: Garnish with additional lime zest for a pop of color, then chill in the refrigerator for at least 120 minutes before serving.
