Description

A delicious Key Lime Cheesecake filled with zesty flavors and creamy texture, perfect for summer gatherings.


Ingredients

  • 1 cup graham cracker crumbs
  • 1 tablespoon granulated sugar
  • 3 tablespoons unsalted butter, melted
  • 2 packages cream cheese (8 ounces each), room temperature
  • 2/3 cup granulated sugar
  • 1/3 cup sour cream, room temperature
  • 1 teaspoon vanilla extract
  • 2 large eggs, room temperature
  • 6 tablespoons key lime juice
  • 1 teaspoon key lime zest
  • Whipped cream, for garnish
  • Fresh key limes or Persian limes, sliced, for garnish

Instructions

  1. Preheat the oven to 350 degrees F. Line the bottom of a 7-inch springform pan with parchment paper.
  2. Combine graham cracker crumbs, sugar, and melted butter in a medium mixing bowl until well combined. Press evenly into the bottom of the springform pan.
  3. Wrap the bottom and sides of the pan with aluminum foil.
  4. Beat the cream cheese with a hand mixer until smooth, about 2-3 minutes. Add sugar, sour cream, and vanilla, mixing until creamy.
  5. Add the eggs one at a time, mixing until fully blended before adding the next. Mix in lime juice and zest until combined.
  6. Pour the cheesecake mixture over the crust, smoothing the top with a spatula. Place the springform pan into a larger pan and fill the larger pan with hot water.
  7. Bake for 70-80 minutes until slightly golden brown and set in the middle.
  8. Cool to room temperature and refrigerate for at least 4 hours or overnight.
  9. Garnish with whipped cream and slices of fresh limes before serving.

Notes

For best results, ensure all ingredients are at room temperature. Use a water bath to prevent cracks.
