Description
A warm and comforting peach cobbler that captures the essence of summer with its sweet peach filling and crispy cobbler topping.
Ingredients
Scale
- 6 cups fresh peaches, peeled and sliced
- 1 cup granulated sugar (for peaches)
- ¼ cup water
- 1 tablespoon fresh lemon juice
- ½ cup unsalted butter
- 1½ cups all-purpose flour
- 1 cup granulated sugar (for batter)
- 2 teaspoons baking powder
- ½ teaspoon salt
- 1 cup whole milk
- 1 teaspoon pure vanilla extract
- ½ teaspoon ground cinnamon
- ¼ teaspoon ground nutmeg
Instructions
- Prep the peaches: In a large bowl, combine the sliced peaches with 1 cup of granulated sugar, water, and lemon juice. Stir to coat and let sit for about 10 minutes to release the juices.
- Melt the butter: While the peaches rest, place the butter in your baking dish and melt it in the preheated oven at 350°F (175°C).
- Mix the batter: In another bowl, whisk together the flour, 1 cup sugar, baking powder, and salt. Gradually stir in the milk and vanilla extract until just combined.
- Combine the batter: Carefully pour the batter over the melted butter in the baking dish without stirring.
- Layer on the peaches: Spoon the peach mixture, including the juices, over the batter without stirring it in.
- Spice it up: Sprinkle with cinnamon and nutmeg to taste.
- Bake: Bake for 30-35 minutes or until the top is golden brown and the peaches are bubbling.
