Ingredients

- 3 tablespoons white sesame seeds
- 3 tablespoons Japanese Kewpie mayonnaise
- 3 tablespoons neutral flavored oil
- 1 ½ tablespoons Japanese soy sauce
- 1 tablespoon rice vinegar
- 2 teaspoons mirin (optional)
- 2–3 teaspoons honey or brown sugar (to taste)
- ½ teaspoon toasted sesame oil
- Freshly ground black pepper (to taste)
Instructions
- Toast the sesame seeds in a dry sauté pan over medium-high heat, stirring constantly until golden, about 3-4 minutes, then reduce heat to medium and continue toasting until dark brown, about another 2-3 minutes. Transfer to a plate to cool.
- Grind the cooled sesame seeds into a fine meal using a mortar and pestle or a coffee grinder for about 30 seconds.
- Whisk together the ground sesame seeds and remaining ingredients until smooth and well combined.
- Taste the dressing and adjust the seasoning with freshly ground black pepper or more honey/sugar as needed.
- Store the dressing in an airtight container in the fridge for up to a week, mixing well before each use.
Notes
For the best flavor, use toasted sesame seeds and Kewpie mayonnaise. Adjust sweetness to your taste.
