Description

A refreshing and vibrant ruby-red beverage made from dried sorrel flowers, ginger, and spices, perfect for festive occasions.


Ingredients

  • 3 cups dried sorrel (hibiscus)
  • 3/4 pound fresh ginger, grated
  • 10 whole cloves
  • 10 allspice berries
  • 2 1/2 cups sugar

Instructions

  1. Boil water: In a large pot, bring about 8 cups of water to a rolling boil.
  2. Add ingredients: Once boiling, add the dried sorrel, grated ginger, whole cloves, and allspice berries. Reduce the heat to a gentle simmer and let everything steep for about 8 minutes.
  3. Cool and refrigerate: After simmering, remove the pot from heat. Allow it to cool to room temperature, then refrigerate for 8 hours to up to 3 days.
  4. Filter the mixture: Once chilled, strain the mixture through a fine mesh strainer or cheesecloth into a clean jug.
  5. Make simple syrup: Combine equal parts sugar and water in a small saucepan, and heat gently until the sugar dissolves completely.
  6. Serve: Pour over ice and garnish with fresh mint or citrus slices.

Adjust sweetness to your preference; you can substitute sugar with honey or agave for a healthier version.
