Description

Delightful cookies with a buttery base and a burst of jam, perfect for any occasion.


Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1 cup unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon almond extract
  • 1/2 teaspoon salt
  • 1 cup jam (any flavor)
  • 1 cup powdered sugar (for glaze)
  • 12 tablespoons milk (for glaze)
  • 1/4 teaspoon almond extract (for glaze)

Instructions

  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Cream the butter and sugar together until light and fluffy, about 3-4 minutes.
  3. Add vanilla and almond extracts, mixing until smooth.
  4. Gradually add flour and salt to the mixture, mixing on low speed until just combined.
  5. Roll the dough into 1-inch balls and place on the baking sheet.
  6. Create an indentation in the center of each ball using your thumb.
  7. Fill each thumbprint with jam, being careful not to overflow.
  8. Bake for 12-15 minutes or until lightly golden at the edges.
  9. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.
  10. Prepare the glaze by whisking together powdered sugar, milk, and almond extract, and drizzle over cooled cookies.

Notes

These cookies freeze well. Store in an airtight container. Great with various jams or chocolate spreads.
