Ingredients

- 1 lb boneless, skinless chicken thighs or breasts
- 2 tbsp olive oil
- Juice of 1 lemon
- 2 garlic cloves, minced
- 1 tsp dried oregano
- Salt & pepper to taste
- 2 cups cooked rice or quinoa
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/4 cup red onion, thinly sliced
- 1/4 cup Kalamata olives
- 1/4 cup crumbled feta cheese
- 1/2 cup tzatziki sauce
- Fresh parsley for garnish
Instructions
- Marinate the chicken by combining olive oil, lemon juice, minced garlic, oregano, salt, and pepper in a bowl. Coat the chicken well and refrigerate for at least 30 minutes.
- Cook the chicken over medium heat for 5-6 minutes on each side until cooked through, then slice into strips.
- In a large bowl, layer cooked rice or quinoa with the veggies, olives, feta, and chicken. Top with tzatziki and garnish with fresh parsley.
- Serve warm or chilled, ensuring calzones are golden brown if served warm.
Notes
Leftover calzones can be stored in an airtight container in the fridge for up to 3 days, or frozen for up to a month. Prepare fillings a day in advance for convenience.
