Description

Delightful Jack-O’-Lantern Calzones that are perfect for Halloween gatherings, filled with a savory mixture of chicken, vegetables, and cheese.


Ingredients

  • 1 lb boneless, skinless chicken thighs or breasts
  • 2 tbsp olive oil
  • Juice of 1 lemon
  • 2 garlic cloves, minced
  • 1 tsp dried oregano
  • Salt & pepper to taste
  • 2 cups cooked rice or quinoa
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup Kalamata olives
  • 1/4 cup crumbled feta cheese
  • 1/2 cup tzatziki sauce
  • Fresh parsley for garnish

Instructions

  1. Marinate the chicken by combining olive oil, lemon juice, minced garlic, oregano, salt, and pepper in a bowl. Coat the chicken well and refrigerate for at least 30 minutes.
  2. Cook the chicken over medium heat for 5-6 minutes on each side until cooked through, then slice into strips.
  3. In a large bowl, layer cooked rice or quinoa with the veggies, olives, feta, and chicken. Top with tzatziki and garnish with fresh parsley.
  4. Serve warm or chilled, ensuring calzones are golden brown if served warm.

Notes

Leftover calzones can be stored in an airtight container in the fridge for up to 3 days, or frozen for up to a month. Prepare fillings a day in advance for convenience.
