- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 cup powdered sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon rum extract
- 3 cups all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup chopped pistachios or pecans
- 1/3 cup cocoa powder
- Food coloring (red and green)
Instructions
- Preheat your oven to 350°F (175°C).
- Cream together the softened butter, granulated sugar, and powdered sugar until light and fluffy.
- Beat in the eggs, vanilla extract, and rum extract until smooth.
- Whisk together the flour, baking powder, and salt in another bowl and gradually add to the butter-sugar mixture.
- Divide the dough into three parts, color one with cocoa powder and the other with green food coloring.
- Roll each part into a log, layer them, and gently press into a tri-color log.
- Slice the log into 1/2 inch thick cookies and place on a baking sheet.
- Bake for 10-12 minutes or until lightly golden around the edges.
- Cool on a wire rack.
Notes
Use high-quality butter for the best flavor. If you’re out of rum extract, vanilla extract can substitute.
