Ingredients

  • 12 oz Bow Tie Pasta (Farfalle)
  • 1 pint Cherry Tomatoes, halved
  • 1 medium Cucumber, diced
  • 1 cup Bell Pepper, diced
  • ½ small Red Onion, thinly sliced
  • 8 oz Mozzarella Balls
  • ½ cup Fresh Basil, chopped
  • ½ cup Olive Oil
  • 3 tablespoons Red Wine Vinegar
  • Salt & Pepper, to taste
  • 1 teaspoon Italian Seasoning

Instructions

  1. Boil the Pasta: Fill a large pot with water, add salt, and bring to a boil. Add pasta and cook until al dente, about 8-10 minutes. Drain and rinse under cold water.
  2. Prepare the Veggies: Chop the cherry tomatoes, cucumber, bell pepper, and red onion. Combine in a large mixing bowl.
  3. Make the Dressing: Whisk together olive oil, red wine vinegar, Italian seasoning, salt, and pepper in a small bowl.
  4. Combine: Add the cooled pasta to the bowl with the veggies, mozzarella balls, and basil. Drizzle dressing and toss to coat.
  5. Serve or Chill: Serve immediately or chill in the fridge for at least an hour for the best flavor.
