- 12 oz Bow Tie Pasta (Farfalle)
- 1 pint Cherry Tomatoes, halved
- 1 medium Cucumber, diced
- 1 cup Bell Pepper, diced
- ½ small Red Onion, thinly sliced
- 8 oz Mozzarella Balls
- ½ cup Fresh Basil, chopped
- ½ cup Olive Oil
- 3 tablespoons Red Wine Vinegar
- Salt & Pepper, to taste
- 1 teaspoon Italian Seasoning
Instructions
- Boil the Pasta: Fill a large pot with water, add salt, and bring to a boil. Add pasta and cook until al dente, about 8-10 minutes. Drain and rinse under cold water.
- Prepare the Veggies: Chop the cherry tomatoes, cucumber, bell pepper, and red onion. Combine in a large mixing bowl.
- Make the Dressing: Whisk together olive oil, red wine vinegar, Italian seasoning, salt, and pepper in a small bowl.
- Combine: Add the cooled pasta to the bowl with the veggies, mozzarella balls, and basil. Drizzle dressing and toss to coat.
- Serve or Chill: Serve immediately or chill in the fridge for at least an hour for the best flavor.
