Delightful mini tarts featuring a flaky pastry shell filled with creamy cheese and topped with sweet peach slices.

- 2 cups all-purpose flour
- 1 cup cold unsalted butter
- 1/2 tsp salt
- 1/4 cup ice water
- Cream cheese slices (1/2 inch thick)
- 2 fresh peaches, sliced
- 1 tsp cinnamon
- 1 tbsp lemon juice
- 2 tbsp honey
Instructions
- Preheat the oven to 400°F (200°C).
- Prepare the Dough: In a bowl, combine flour and salt. Grate the cold butter into the mix, blending until it resembles coarse crumbs.
- Gradually add ice water until the dough comes together. Wrap in plastic and refrigerate for 30 minutes.
- Roll Out & Cut: Roll out the chilled pastry to 1/8-inch thickness and cut into circles for a mini tart tin. Press the pastry circles firmly into the tin.
- Fill with Cheese: Place a slice of cream cheese into each tart shell, and top generously with peach slices.
- Glaze for Flavor: In a small bowl, whisk together the cinnamon, lemon juice, and honey. Brush this mixture over the tarts for added flavor.
- Bake: Place the tart tin in the oven and bake for 20-25 minutes, or until golden brown.
- Allow to cool for a few moments before removing from the tin and serving.
Notes
Serve warm with whipped cream or vanilla ice cream. Perfect for summer gatherings.
