- 1/2 cup unsalted butter, cold and cubed
- 1 cup fresh peaches, diced
- 1/2 cup heavy cream
- 1 teaspoon vanilla extract
- 1/2 cup powdered sugar
- 1 tablespoon honey
- Water as needed
Instructions
- Preheat your oven to 400°F (200°C).
- Mix together the flour, sugar, baking powder, and salt until well combined.
- Add the cubed butter and mix until the mixture resembles coarse crumbs.
- Fold in the diced peaches without overworking the dough.
- Whisk together the heavy cream and vanilla extract until smooth.
- Pour the wet ingredients into the dry mixture and stir just until combined; be careful not to overmix.
- Turn the dough onto a floured surface and pat it into a circle about 1 inch thick. Cut into wedges and place on a lined baking sheet.
- Bake for 15-20 minutes or until golden brown and fragrant.
- Whisk together powdered sugar, honey, and water until smooth for the glaze. Drizzle over warm scones before serving.
