- 1 tablespoon cornstarch

- 1 package refrigerated pie crusts
- 1 egg (for egg wash)

Instructions
- Preheat your oven to 400°F (200°C).
- Combine the chopped plums, sugar, cornstarch, and vanilla extract in a mixing bowl. Gently mix until evenly coated and set aside.
- Roll out the pie crusts on a floured surface to about 1/8 inch thick. Cut them into squares of approximately 4 inches.
- Spoon the plum mixture onto one side of each square, ensuring a generous but manageable amount.
- Fold the other side over to create a triangle shape, pressing the edges firmly to seal. Use a fork to crimp the edges for an elevated look and a better seal.
- Whisk together the egg and milk for the egg wash; brush it over each turnover.
- Sprinkle with cinnamon sugar if desired for an extra touch of sweetness and crunch.
- Bake for 20-25 minutes, or until they are golden-brown and your kitchen is filled with irresistible aromas.
- Allow to cool slightly before serving.
