Description

Ingredients

  • 2 cups fresh peaches, diced
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 tablespoon lemon juice
  • 2 cups all-purpose flour
  • 1 cup rolled oats
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. Combine the diced peaches, granulated sugar, and lemon juice in a mixing bowl. Allow the mixture to rest while you prepare the crumble.
  3. Whisk together the flour, oats, brown sugar, baking powder, and salt in a separate bowl.
  4. Cut in the softened butter and add the vanilla extract, working until the mixture resembles coarse crumbs.
  5. Press half of the crumb mixture into the bottom of the greased baking dish.
  6. Spread the peach mixture over the crust, covering it evenly.
  7. Sprinkle the remaining crumb mixture on top of the peaches.
  8. Bake for 35-40 minutes until the top is golden brown.
  9. Cool before slicing into squares. Serve with a scoop of vanilla ice cream for extra indulgence.
