- 2 cups fresh peaches, diced
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 1 tablespoon lemon juice
- 2 cups all-purpose flour
- 1 cup rolled oats
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish.
- Combine the diced peaches, granulated sugar, and lemon juice in a mixing bowl. Allow the mixture to rest while you prepare the crumble.
- Whisk together the flour, oats, brown sugar, baking powder, and salt in a separate bowl.
- Cut in the softened butter and add the vanilla extract, working until the mixture resembles coarse crumbs.
- Press half of the crumb mixture into the bottom of the greased baking dish.
- Spread the peach mixture over the crust, covering it evenly.
- Sprinkle the remaining crumb mixture on top of the peaches.
- Bake for 35-40 minutes until the top is golden brown.
- Cool before slicing into squares. Serve with a scoop of vanilla ice cream for extra indulgence.
Notes
Serve with fresh mint leaves and a refreshing drink. For a vegan option, substitute butter with coconut oil.
