Description

Ingredients

  • Fresh Plums: 6 cups, pitted and sliced
  • Granulated Sugar: 1 cup + 3/4 cup for fruit mixture
  • Lemon Juice: 1 tablespoon
  • Vanilla Extract: 1 teaspoon + 1/2 teaspoon for batter
  • Cornstarch: 1 tablespoon
  • All-Purpose Flour: 1 cup
  • Baking Powder: 1 teaspoon
  • Salt: 1/2 teaspoon
  • Unsalted Butter: 1/2 cup (1 stick), melted
  • Whole Milk: 1/2 cup

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the sliced plums, 3/4 cup sugar, lemon juice, vanilla extract, and cornstarch in a large bowl. Toss gently and set aside.
  3. Whisk together the flour, 1 cup sugar, baking powder, and salt in another bowl. Create a well in the center, pour in the melted butter and milk, then add the additional vanilla. Stir until just combined.
  4. Pour the fruit mixture evenly in a well-greased cast iron skillet, and drop spoonfuls of batter on top.
  5. Bake for about 30-35 minutes until golden brown and a toothpick inserted comes out clean.
  6. Allow to cool slightly before serving. Enjoy warm, preferably with ice cream or whipped cream.

Notes

For sweeter results, use ripe, in-season plums. This recipe can be modified for vegan or gluten-free diets.
