Ingredients
- Fresh Plums: 6 cups, pitted and sliced
- Granulated Sugar: 1 cup + 3/4 cup for fruit mixture
- Lemon Juice: 1 tablespoon
- Vanilla Extract: 1 teaspoon + 1/2 teaspoon for batter
- Cornstarch: 1 tablespoon
- All-Purpose Flour: 1 cup
- Baking Powder: 1 teaspoon
- Salt: 1/2 teaspoon
- Unsalted Butter: 1/2 cup (1 stick), melted
- Whole Milk: 1/2 cup
Instructions
- Preheat your oven to 350°F (175°C).
- Combine the sliced plums, 3/4 cup sugar, lemon juice, vanilla extract, and cornstarch in a large bowl. Toss gently and set aside.
- Whisk together the flour, 1 cup sugar, baking powder, and salt in another bowl. Create a well in the center, pour in the melted butter and milk, then add the additional vanilla. Stir until just combined.
- Pour the fruit mixture evenly in a well-greased cast iron skillet, and drop spoonfuls of batter on top.
- Bake for about 30-35 minutes until golden brown and a toothpick inserted comes out clean.
- Allow to cool slightly before serving. Enjoy warm, preferably with ice cream or whipped cream.
Notes
For sweeter results, use ripe, in-season plums. This recipe can be modified for vegan or gluten-free diets.
