Description

A comforting and delicious blueberry cobbler with a soft, buttery topping that melts in your mouth.


Ingredients

  • Fresh Blueberries: 3 cups
  • Lemon Zest: 2 teaspoons
  • Granulated Sugar: 1/4 cup (divided) and 1 1/2 cups (divided)
  • All-Purpose Flour: 1 1/2 cups
  • Baking Powder: 2 1/2 teaspoons
  • Salt: 3/4 teaspoon
  • Milk: 1 1/2 cups
  • Vanilla Extract: 1 teaspoon
  • Unsalted Butter: 12 tablespoons (divided)

Instructions

  1. Preheat your oven to 350°F (175°C) and melt 4 tablespoons of butter in a 9 x 13-inch pan.
  2. In a small saucepan over low heat, brown the remaining 8 tablespoons of butter until it takes on a rich, nutty aroma.
  3. For the blueberry filling, combine fresh blueberries, lemon zest, and 1/4 cup of sugar in a medium bowl, gently folding to combine.
  4. In another bowl, whisk together flour, baking powder, salt, and the remaining 1 1/2 cups of sugar; gradually mix in milk and a splash of vanilla until smooth.
  5. Pour the batter over the melted butter in the pan, making sure not to stir. Spoon the prepared blueberries on top evenly.
  6. Finish by sprinkling the additional 2 tablespoons of sugar over the top before baking for 45-50 minutes or until golden and bubbly.
  7. Allow it to cool for about 10 minutes to set, then serve warm, optionally with a scoop of vanilla ice cream.

Notes

For best results, use fresh and firm blueberries. Can use frozen blueberries but adjust baking time accordingly.
