A comforting and delicious blueberry cobbler with a soft, buttery topping that melts in your mouth.
Ingredients
- Fresh Blueberries: 3 cups
- Lemon Zest: 2 teaspoons
- Granulated Sugar: 1/4 cup (divided) and 1 1/2 cups (divided)
- All-Purpose Flour: 1 1/2 cups
- Baking Powder: 2 1/2 teaspoons
- Salt: 3/4 teaspoon
- Milk: 1 1/2 cups
- Vanilla Extract: 1 teaspoon
- Unsalted Butter: 12 tablespoons (divided)
Instructions
- Preheat your oven to 350°F (175°C) and melt 4 tablespoons of butter in a 9 x 13-inch pan.
- In a small saucepan over low heat, brown the remaining 8 tablespoons of butter until it takes on a rich, nutty aroma.
- For the blueberry filling, combine fresh blueberries, lemon zest, and 1/4 cup of sugar in a medium bowl, gently folding to combine.
- In another bowl, whisk together flour, baking powder, salt, and the remaining 1 1/2 cups of sugar; gradually mix in milk and a splash of vanilla until smooth.
- Pour the batter over the melted butter in the pan, making sure not to stir. Spoon the prepared blueberries on top evenly.
- Finish by sprinkling the additional 2 tablespoons of sugar over the top before baking for 45-50 minutes or until golden and bubbly.
- Allow it to cool for about 10 minutes to set, then serve warm, optionally with a scoop of vanilla ice cream.
Notes
For best results, use fresh and firm blueberries. Can use frozen blueberries but adjust baking time accordingly.
