A delightful and comforting baked salmon dish with spinach and gooey mozzarella, perfect for any occasion.
Ingredients

- 2 fillets Salmon
- Salt and Pepper, to taste
- 300 g Spinach, thawed and drained
- 1 Onion, sliced
- 2 cloves Garlic, minced
- 200 g Sour Cream
- 150 g Mozzarella
- 1 tbsp Olive Oil
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat. Add sliced onions and sauté until translucent, about 5 minutes. Stir in minced garlic and sauté for an additional minute.
- Add the thawed spinach and cook for 3-4 minutes. Season with salt and pepper to taste.
- In a baking dish, spread the sautéed spinach and onion mixture evenly.
- Season salmon fillets with salt and pepper and place them on top of the spinach mix, skin-side down.
- Layer sour cream over the salmon, ensuring an even spread.
- Sprinkle mozzarella generously over the sour cream layer.
- Bake for 18-20 minutes or until the salmon is cooked through and the cheese is bubbling and golden.
- Let it rest for a few minutes before serving.
Notes
For a spicier kick, add crushed red pepper flakes. Can be prepared in advance and stored in the fridge until ready to bake.
