Description

A delightful and comforting baked salmon dish with spinach and gooey mozzarella, perfect for any occasion.


Ingredients

Scale
  • 2 fillets Salmon
  • Salt and Pepper, to taste
  • 300 g Spinach, thawed and drained
  • 1 Onion, sliced
  • 2 cloves Garlic, minced
  • 200 g Sour Cream
  • 150 g Mozzarella
  • 1 tbsp Olive Oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat. Add sliced onions and sauté until translucent, about 5 minutes. Stir in minced garlic and sauté for an additional minute.
  3. Add the thawed spinach and cook for 3-4 minutes. Season with salt and pepper to taste.
  4. In a baking dish, spread the sautéed spinach and onion mixture evenly.
  5. Season salmon fillets with salt and pepper and place them on top of the spinach mix, skin-side down.
  6. Layer sour cream over the salmon, ensuring an even spread.
  7. Sprinkle mozzarella generously over the sour cream layer.
  8. Bake for 18-20 minutes or until the salmon is cooked through and the cheese is bubbling and golden.
  9. Let it rest for a few minutes before serving.

Notes

For a spicier kick, add crushed red pepper flakes. Can be prepared in advance and stored in the fridge until ready to bake.
