- 1 cup all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsweetened cocoa powder
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup vegetable oil
- 1/2 cup buttermilk
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup brewed coffee (cooled)
- Heavy cream (for whipping)
- Sugar (for coffee cream)
- Semi-sweet chocolate (for ganache)
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
- Whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt in a large bowl.
- Mix vegetable oil, buttermilk, eggs, vanilla extract, and cooled brewed coffee in another bowl until smooth.
- Combine the wet and dry ingredients, stirring gently until just combined; do not overmix.
- Pour the batter into the prepared cupcake liners, filling them about 2/3 full.
- Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
- Whip the heavy cream with sugar until soft peaks form for the coffee cream while the cupcakes cool.
- Melt the chocolate over a double boiler or in the microwave, stirring until smooth for the ganache.
- Cut a small hole in the center of each cooled cupcake, fill with whipped coffee cream, and drizzle with chocolate ganache.
