Description

Deliciously rich chocolate cupcakes infused with coffee, topped with whipped cream and chocolate ganache for a heavenly treat.


Ingredients

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup vegetable oil
  • 1/2 cup buttermilk
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup brewed coffee (cooled)
  • Heavy cream (for whipping)
  • Sugar (for coffee cream)
  • Semi-sweet chocolate (for ganache)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. Whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt in a large bowl.
  3. Mix vegetable oil, buttermilk, eggs, vanilla extract, and cooled brewed coffee in another bowl until smooth.
  4. Combine the wet and dry ingredients, stirring gently until just combined; do not overmix.
  5. Pour the batter into the prepared cupcake liners, filling them about 2/3 full.
  6. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  7. Whip the heavy cream with sugar until soft peaks form for the coffee cream while the cupcakes cool.
  8. Melt the chocolate over a double boiler or in the microwave, stirring until smooth for the ganache.
  9. Cut a small hole in the center of each cooled cupcake, fill with whipped coffee cream, and drizzle with chocolate ganache.
  10. Serve and enjoy your chocolate coffee cupcakes.
