Description

A creamy, spiced cocktail that captures all the flavors of pumpkin pie in a warm, boozy drink. Perfect for sipping by the fire on cool fall evenings or serving at holiday gatherings.


Ingredients

4 cups milk

2 cups Cinnamon Vanilla Baileys Irish Cream

½ cup vanilla or pumpkin pie vodka

1 can pumpkin puree: Important

1 ½ teaspoons pumpkin pie spice

Cool Whip or whipped cream topping


Instructions

  1. In a small saucepan, whisk together milk, pumpkin puree, brown sugar, pumpkin pie spice, vanilla, and salt over medium heat until steaming (do not boil).
  2. Remove from heat and blend with an immersion blender until smooth (or strain through a fine mesh sieve).
  3. Stir in rum and coffee liqueur (if using).
  4. Pour into heatproof mugs and top with whipped cream.
  5. Garnish with a sprinkle of nutmeg and cinnamon stick.

Notes

  • For non-alcoholic version: Omit liquor and add 1/4 tsp rum extract
  • Make it frothy: Blend hot mixture in a regular blender before adding alcohol
  • Slow cooker option: Keep warm in a crockpot for parties (add alcohol just before serving)
  • Spice variation: Add a pinch of cayenne for a spicy kick
