A creamy, spiced cocktail that captures all the flavors of pumpkin pie in a warm, boozy drink. Perfect for sipping by the fire on cool fall evenings or serving at holiday gatherings.
Ingredients
4 cups milk
2 cups Cinnamon Vanilla Baileys Irish Cream
½ cup vanilla or pumpkin pie vodka
1 can pumpkin puree: Important
1 ½ teaspoons pumpkin pie spice
Cool Whip or whipped cream topping
Instructions
- In a small saucepan, whisk together milk, pumpkin puree, brown sugar, pumpkin pie spice, vanilla, and salt over medium heat until steaming (do not boil).
- Remove from heat and blend with an immersion blender until smooth (or strain through a fine mesh sieve).
- Stir in rum and coffee liqueur (if using).
- Pour into heatproof mugs and top with whipped cream.
- Garnish with a sprinkle of nutmeg and cinnamon stick.
Notes
- For non-alcoholic version: Omit liquor and add 1/4 tsp rum extract
- Make it frothy: Blend hot mixture in a regular blender before adding alcohol
- Slow cooker option: Keep warm in a crockpot for parties (add alcohol just before serving)
- Spice variation: Add a pinch of cayenne for a spicy kick
