- ⅓ cup pure honey
- 2–3 tablespoons hot sauce (e.g., Frank’s RedHot)
- 2 cups white or brown rice
- Assorted veggies (bell peppers, broccoli, carrots)
- Salt, to taste
- Freshly ground pepper, to taste
- 1–2 tablespoons olive oil or avocado oil
Instructions
- Cook the Rice: In a medium pot, bring water to a boil and add rice according to package instructions (about 15 minutes for white rice). Once cooked, fluff with a fork and set aside.
- Make the Glaze: In a small bowl, whisk together honey and hot sauce until fully combined. Adjust hot sauce to your preference.
- Season the Chicken: Sprinkle chicken with salt and pepper generously on both sides.
- Cook the Chicken: Heat oil in a skillet over medium-high heat. Cook chicken for 5-7 minutes per side until browned and cooked through (internal temp should be 165°F).
- Glaze the Chicken: In the final 2-3 minutes of cooking, brush the hot honey glaze over the chicken.
- Sauté the Veggies: In the same skillet, add your chosen veggies and sauté for about 4-5 minutes until tender yet crisp.
- Serve: Layer cooked rice in bowls, place the glazed chicken on top, and add the sautéed or roasted veggies. Enjoy!
Notes
For extra flavor, marinate the chicken in the glaze for 30 minutes before cooking. The dish can be stored in an airtight container in the fridge for up to 3 days.
