- 3/4 to 1 cup honey
- 2 tablespoons fresh lemon juice
- 1 tablespoon low or no-sugar pectin (optional)
- 1/2 teaspoon ground cinnamon (optional)
- 1/2 teaspoon vanilla extract (optional)
- 1/8 teaspoon ground ginger (optional)
Instructions
- Prepare Your Peaches: Bring a large pot of water to a boil. Score a small X on the bottom of each peach, blanch in boiling water for 30–60 seconds, then transfer to an ice bath. Cool, peel, pit, and chop the peaches.
- Cook the Peaches: In a large pot, combine peaches and lemon juice. Simmer over medium heat for 10–15 minutes.
- Sweeten It Up: Stir in honey and any optional spices or extracts.
- The Final Cook: Cook for another 15–25 minutes until thickened, using the cold plate test for readiness.
- Jar It Up: Skim foam, ladle hot jam into sterilized jars, leaving 1/4 inch headspace, and process in a boiling water bath for 10–15 minutes.
- Store Your Treasure: Store in a cool, dark place for up to one year and refrigerate after opening.
