- 1¾ cups all-purpose flour
- 1½ tsp baking powder
- ¼ tsp salt
- ½ cup honey
- ½ cup unsalted butter, softened
- ½ cup granulated sugar
- 2 large eggs, room temperature
- 1 tsp vanilla extract
- 1 cup peaches, finely diced (fresh or well-drained canned)
- ½ cup whole milk
- 8 oz cream cheese, softened
- ¼ cup unsalted butter, softened
- 3 cups powdered sugar, sifted
- 2 Tbsp honey (for frosting)
- 1 tsp vanilla extract (for frosting)
- 2 Tbsp peach puree (optional)
Instructions
- Preheat the oven to 350°F (175°C) and line a 12-cup muffin tin with cupcake liners.
- In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
- In a large mixing bowl, beat the softened butter, sugar, and honey until light and fluffy, about 3-4 minutes.
- Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- Alternate adding the dry mixture and the milk, starting and ending with the dry ingredients. Mix until just combined.
- Gently fold in the diced peaches.
- Scoop the batter into the cupcake liners, filling each about ⅔ full.
- Bake for 18-22 minutes or until a toothpick inserted comes out clean. Cool in the pan for a few minutes, then transfer to a wire rack.
- For frosting, beat cream cheese and softened butter until smooth, then gradually add sifted powdered sugar, honey, and vanilla extract. Beat until fluffy and fold in peach puree if desired.
- Once cupcakes are cool, frost and garnish with peach slices or a drizzle of honey.
Notes
Temperature matters; ensure butter and cream cheese are at room temperature for the best frosting consistency. Store in an airtight container.
