- 2 tbsp olive oil
- 4 boneless, skinless chicken breasts
- 3 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp paprika
- 1 tsp salt
- 1/2 tsp black pepper
- 3 limes, juiced
- 1 tbsp honey
- 1 cup long-grain rice
- 1 1/2 cups water
- 1/2 tsp salt
- 1 ripe avocado, diced
- 1/4 cup fresh cilantro, chopped
Instructions
- Make the Marinade: In a bowl, whisk together olive oil, minced garlic, ground cumin, paprika, salt, black pepper, juice from 2 limes, and honey.
- Marinate the Chicken: Add the chicken breasts to the marinade, cover, and refrigerate for at least 15 minutes or up to 2 hours.
- Cook the Rice: Rinse rice under cold water. In a pot, combine the rinsed rice, water, and salt; bring to a boil.
- Simmer the Rice: Cover and simmer the rice for 15 to 18 minutes, until fluffy. Let sit covered for 5 minutes.
- Fluff and Mix: Fluff the rice, gently stir in diced avocado, chopped cilantro, and juice from the remaining lime.
- Cook the Chicken: Heat a grill pan over medium-high heat. Cook the marinated chicken for 6 to 7 minutes per side until cooked.
- Rest and Slice: Let the chicken rest for 5 minutes, then slice into strips.
- Serve: Serve the sliced chicken over the avocado rice with extra cilantro or lime wedges.
Notes
For best results, marinate chicken for at least 30 minutes. Store leftovers in the fridge for up to 3 days.
