Ingredients

  • 1 acorn squash, halved and seeded
  • 2 tablespoons honey
  • Salt to taste
  • Pepper to taste
  • 1/2 cup goat cheese, crumbled
  • 1/2 cup dried cranberries
  • 2 tablespoons olive oil
  • Fresh thyme for garnish (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the acorn squash in half and scoop out the seeds.
  3. Brush the cut sides with olive oil, sprinkle with salt and pepper, and drizzle with honey.
  4. Place the squash halves cut-side down on a baking sheet and roast for 25-30 minutes until tender.
  5. Remove from the oven and carefully turn the squash over.
  6. Fill each half with crumbled goat cheese and dried cranberries.
  7. Return to the oven and bake for an additional 5-10 minutes until the cheese is slightly melted.
  8. Garnish with fresh thyme if desired.
  9. Serve warm as a delightful side dish.
