- 1 acorn squash, halved and seeded
- 2 tablespoons honey
- Salt to taste
- Pepper to taste
- 1/2 cup goat cheese, crumbled
- 1/2 cup dried cranberries
- 2 tablespoons olive oil
- Fresh thyme for garnish (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- Cut the acorn squash in half and scoop out the seeds.
- Brush the cut sides with olive oil, sprinkle with salt and pepper, and drizzle with honey.
- Place the squash halves cut-side down on a baking sheet and roast for 25-30 minutes until tender.
- Remove from the oven and carefully turn the squash over.
- Fill each half with crumbled goat cheese and dried cranberries.
- Return to the oven and bake for an additional 5-10 minutes until the cheese is slightly melted.
- Garnish with fresh thyme if desired.
- Serve warm as a delightful side dish.
