- 1 pound shrimp, peeled and deveined
- 1/4 cup honey
- 3 cloves garlic, minced
- 2 tablespoons soy sauce
- 2 cups cooked rice
- 2 cups broccoli florets
- 2 tablespoons olive oil
- Salt and pepper to taste
- Sesame seeds (optional, for garnish)
- Green onions (optional, for garnish)
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, whisk together honey, minced garlic, soy sauce, salt, and pepper.
- Toss the shrimp in the honey garlic mixture and let them marinate for 10-15 minutes.
- On a baking sheet, toss the broccoli florets with olive oil, salt, and pepper.
- Place the shrimp on the same baking sheet in a single layer.
- Roast in the oven for 12-15 minutes until the shrimp are opaque and the broccoli is crispy.
- Serve the shrimp over rice with broccoli on the side. Garnish with sesame seeds and green onions if desired.
Notes
Make sure not to overcook the shrimp; they are perfectly cooked when they curl into a ‘C’ shape.
