A comforting dish of juicy chicken in a honey BBQ glaze paired with creamy garlic Parmesan potatoes.

- 4 boneless skinless chicken breasts (or thighs)
- 1/4 cup honey
- 1/2 cup BBQ sauce
- 1 tbsp olive oil
- Salt and pepper to taste
- 2 lbs Yukon Gold potatoes, diced
- 2 tbsp butter
- 4 garlic cloves, minced
- 1/2 cup heavy cream
- 1 cup freshly grated Parmesan cheese
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 375°F (190°C) and line a baking sheet with foil.
- In a mixing bowl, whisk together the honey, BBQ sauce, olive oil, salt, and pepper.
- Coat the chicken in the honey BBQ glaze and place on the prepared baking sheet.
- Bake for 25-30 minutes, broiling for the last 2-3 minutes until crisp.
- Boil Yukon Gold potatoes in salted water until fork-tender (10-12 minutes), then drain.
- In a skillet, melt butter, add garlic, and sauté until fragrant.
- Stir in heavy cream and Parmesan, allowing sauce to thicken.
- Toss boiled potatoes in the garlic Parmesan sauce, seasoning with salt and pepper.
- Plate the creamy potatoes and top with BBQ chicken, garnishing with parsley.
Notes
Use a meat thermometer to check that chicken is cooked to 165°F (74°C). Don’t skip broiling for a crispy finish.
