Description

A comforting dish of juicy chicken in a honey BBQ glaze paired with creamy garlic Parmesan potatoes.


Ingredients

  • 4 boneless skinless chicken breasts (or thighs)
  • 1/4 cup honey
  • 1/2 cup BBQ sauce
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • 2 lbs Yukon Gold potatoes, diced
  • 2 tbsp butter
  • 4 garlic cloves, minced
  • 1/2 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with foil.
  2. In a mixing bowl, whisk together the honey, BBQ sauce, olive oil, salt, and pepper.
  3. Coat the chicken in the honey BBQ glaze and place on the prepared baking sheet.
  4. Bake for 25-30 minutes, broiling for the last 2-3 minutes until crisp.
  5. Boil Yukon Gold potatoes in salted water until fork-tender (10-12 minutes), then drain.
  6. In a skillet, melt butter, add garlic, and sauté until fragrant.
  7. Stir in heavy cream and Parmesan, allowing sauce to thicken.
  8. Toss boiled potatoes in the garlic Parmesan sauce, seasoning with salt and pepper.
  9. Plate the creamy potatoes and top with BBQ chicken, garnishing with parsley.

Notes

Use a meat thermometer to check that chicken is cooked to 165°F (74°C). Don’t skip broiling for a crispy finish.
